15ozcanned Albacore Tuna in water, 3 standard 5 oz cans
3large eggs
½cupParmesan cheese, grated I used Parmigiano Reggiano
½cuppanko breadcrumbs
2Tbsmayonnaise
2Tbsmustard
1tspfresh ground pepper
1tspgranulated garlic (optional)You can also use minced, or roasted
3green onions, finely chopped
1tspdried chili powder or cayenne (optional)
vegetable oil for frying
Instructions
Gather all the ingredients. Drain tuna and flake meat with fork in a large bowl.
Add the rest of the ingredients, except the vegetable oil. Mix well to combine thoroughly.
Using 1/4 cup as a scoop, measure and shape the mixture into patties.
In a large pan, heat up about vegetable oil. The oil should cover the bottom of the pan. When ready, arrange the patties on the pan. Do not overcrowd. Fry on medium heat until the patties are golden brown (about 2 to 3 minutes per side).
Drain cooked patties on paper towel to remove oil. Serve warm with salad. Enjoy!
