Festive Butter Bread

Equipment

  • large round baking pan (I used a 10 inch (25cm) quiche pan)

Ingredients
  

  • 2 tsps. active dry yeast
  • 1 Tbsp. sugar
  • 1 cup (250 ml) whole milk, room temperature, divided
  • 4 cups (500 g) all-purpose flour, plus more for dusting
  • 1 tsp. salt
  • 2 large eggs, room temperature
  • 2 Tbsp. olive oil
  • ½ tsp. vinegar
  • 8 Tbsp. (100g) 1 stick of unsalted butter, melted
  • 1 large egg, lightly beaten with 1 tablespoon of water for egg wash

Instructions
 

  • Let's start by gathering all the ingredients. Mix yeast and sugar in half a cup of milk, stir and let it bloom for about 5 minutes.
  • In a large mixing bowl (or your stand mixer bowl) add flour and salt. Whisk to combine. Add the eggs, the other half cup of milk, olive oil, vinegar and yeast mixture to the dry ingredients. Turn on the mixer (or use a spatula) and combine until a soft dough is formed. Add more flour as needed (¼ to ½ cup/ 30 to 60g) until the dough is soft and pliable.
    If kneading with hand, tip onto a lightly floured surface and knead for about 10 minutes. If using a mixer, turn speed to medium and knead for about 5 minutes.
    When done, form into a round and place in a greased bowl. Cover and let it rise in warm place for about an hour, or until it doubled in size. When dough is resting, generously butter large round baking pan with some of the melted butter and set aside.
  • Deflate the dough and put dough a floured surface. Divide dough into 8 equal sized pieces.Roll out each piece of dough into rectangular shape, all approximately similar in size ( about 6"x10" /15cm x 25cm) each.
    Brush melted butter over each piece and layer one piece on top of another. Roll the 2 pieces together into a cylinder, set it seam side down and set aside. Repeat with the remaining dough pieces. You should end up with 4 cylinders.
  • To shape the bread, for each cylinder, cut about 1½" (4cm) from each end. Then, lightly score and cut the middle part of the cylinder roll into 4 triangles. Arrange the end pieces in the middle of the pan (like the heart of a flower) and place the rest of the triangle pieces around the center (like flower petals). When done, cover and let the shaped dough rest for about 45 minutes.
  • When almost ready, preheat oven to 350°F (180°C). Prepare the egg wash - beat egg with a tablespoon of water until well combined. Carefully brush the egg wash on top of the dough. Bake bread in the preheated oven for 25 to 30 minutes, until the bread is golden brown.
  • When done, remove from oven and promptly brush bread with remaining melted butter. Your Festive Butter Bread is ready!

Notes

  1. If the dough rectangles shrinks when shaping, cover and set aside for 5 minutes and try again after resting. 
  2. Since this bread uses such simple ingredients, please use the best quality full milk butter available for the best tasting outcome.
  3. Uneaten bread can be stored in air tight container for 2 days. For longer period, freeze.
