November 26, 2020. Thanksgiving Day. Jeweled Rice. I discovered this gorgeous jeweled rice festive dish last year when I read the November 2019 copy of Bon Appetit magazine. On page 92 the magazine had an article on how to add something new to the table. …
Pumpkin pies and Thanksgiving goes together like hand in glove. Just like bacon and eggs, peanut butter and jelly. Well, you get the picture. Given the limited time and oven space for Thanksgiving, I wanted to make a simple pumpkin pie for Thanksgiving that would take no time to make and tastes fab. I decided to make a tried and true Libby’s pumpkin pie.
I noticed Libby’s (the iconic canned puree pumpkin maker) recently put out a new recipe and I decided to check it out. And since my husband loves Bourbon, I decided to make a Bourbon Pumpkin Pie. This is one of the easiest (and super tasty) pie to make ever. And if you use store bought pie shell, even simpler. I did use homemade pie crust that was premade from the day before. Use whichever that is most convenient for you.
This pie comes together quickly (under an hour) and adds so much to the holiday table. I love the smell of the spices mingled with the bourbon as it is baking in oven. Feel free to use pumpkin spice mix, which is available widely during this time of the year, in place of the individual spices if you have that handy. I think this pie is a wonderful treat for any time of the year!
Let’s get baking!
Ingredients for Easy Bourbon Pumpkin Pie
Items are listed roughly in the order in which they are used for the recipe.
½ tsp salt 1 tsp ground cinnamon ½ tsp ground ginger ½ tsp grated nutmeg ¼ tsp ground cloves 2 large eggs, room temperature 1¾ cup (15 oz./425 g) Pure Pumpkin Puree 1¼ cup (14 oz./535 g) Sweetened Condensed Milk 1 cup (8 oz./250 g) Evaporated Milk 2 Tbsp. bourbon 9 inch (23 cm) deep dish pie crust homemade or store bought
You’ll also need a 9 inch (23 cm) pie dish, if using homemade crust, and a cookie/baking sheet pan to catch any spillage!
Making the Bourbon Pumpkin Pie Filling
Gather all the ingredients. Preheat oven to 425°F. In a large bowl, beat the eggs and add in the pumpkin. Next, gradually stir in the evaporated and condensed milk. Add in all the spices and salt. Finally, add in the bourbon (I snuck in some of my husband’s best drinking bourbon!). Mix well to thoroughly combine.

Assembling and Baking the Bourbon Pumpkin Pie
When the filling is ready, pour into the prepared pie shell.
Prepared pie crust
Place the entire filled pie shell on to a baking/cookie sheet (to catch any spills) and bake in the preheated oven for 40 – 45 minutes. Pie is done when the center is set and a knife inserted into the center comes out clean.
Left it in the oven for a few minutes too long! Oops!
Remove from oven and cool on rack. Serve unadorned or with a dollop of whipped cream.
Happy eating!
Notes:
You can substitute with premade Pumpkin Pie Spice which are easily available during the holidays. Simply swap out the cinnamon, ginger, nutmeg and cloves with 2¼ tsp of pumpkin pie spice.

This is one of the back-of-my pocket recipes that I have used again and again over the years. It’s relatively easy and delivers big satisfying flavors. For folks new to arroz con pollo, it’s simply chicken with rice, lots of delicious golden saffron rice. The addition of decadent saffron elevates this humble dish to something akin to luxurious feasting.
The original recipe is from William-Sonoma’s Food Made Fast series cookbooks, specifically from the Simple Suppers edition. (I love that whole series and own most of them. Very handy for a busy working mom!) By now, I’ve probably cooked my way through that entire book. And most of the recipes are good, a few duds and then a handful of gems that makes it worth all the trouble wading through the rest!
Anyway, over the years I have added a bit of this and edited a bit of that and made it the way my family likes it. I love using Spanish saffron for this recipe. The flavor and color this precious spice imparts a dish makes it tastes so luxurious! Totally worth the splurge!
A favorite variation is to add some seafood and chorizo sausages to make stove top paella. For this version, I just added a few handfuls of large shrimp since they add a nice contrast to the chicken and rice. You may opt to leave it out and the dish will still taste delish!
The recipe serves 4 hungry person. Let’s get cooking!
Ingredients for Luxurious Arroz Con Pollo
Items listed roughly in the order it is used:
2 cups (400 g) long grain rice, washed and drained 8 chicken thighs, bone-in, skin on Salt and Pepper to taste 2-3 Tbsp. Olive Oil, for pan 6 cloves Garlic, coarsely chopped 1 large Onion, coarsely chopped 3 large roasted red peppers, sliced 1 tsp saffron 3 cups (750 ml) Chicken Broth, homemade or store bought 4 sprigs fresh oregano or herb of your choice 3 large ripe fresh tomatoes, chopped, or 1 can diced tomatoes 12 large shrimp, tail-on (optional)
There isn’t any need for special equipment but you will need a large oven proof pan that has a tight fitting lid to cook this dish.
Preparing Luxurious Arroz Con Pollo
Let’s begin by gathering all the ingredients. Preheat oven to 350°F (180°C). Set ovenproof large pan on stovetop and heat on low. Wash rice until water runs clear. Drain and set aside.
Next, prepare the chicken- clean, remove excess skin and fat. Carefully pat dry with kitchen towel. You want to remove as much moisture so that the skin and meat will brown beautifully in the pan. Then, season generously with salt and fresh cracked black pepper on both sides. Turn up heat on pan to medium high and add olive oil. Swirl oil gently to coat bottom of pan. When ready, add chicken to pan and sear till lightly brown on both sides, approximately 3-4 minutes per side. Transfer to large plate.
Then, lower heat and add chopped garlic, onions, and sliced roasted red peppers to pan. Scrape the bits of the pan drippings and cook till fragrant and soft, about 4-5 minutes. Next, add the drained rice and saffron. Stir thoroughly to coat the rice with mixture. Add chicken broth and bring to boil.
Add the chicken pieces plus all dripping to the pan. Arrange so that there are spaces between the chicken. Top evenly with fresh oregano. Cover with lid and put the entire thing into the preheated oven. Cook for 40-45 minutes.
Then, remove lid and stir in the tomatoes and shrimp. Cover and cook for another 10-15 minutes until the rice has absorbed most of the broth.
When ready, remove from oven, garnish with more fresh herb if desired. Your luxurious arroz con pollo is ready! Buen Provecho!
Notes on Luxurious Arroz Con Pollo
Use the best saffron threads for this dish to obtain maximum flavor. Even though it’s pricey, you’ll only need a very small amount to add richer, bolder flavor to any recipe.
Use fire charred or roasted red peppers for depth. The smokiness adds another layer to the dish.
If you prefer, substitute chicken thighs with breasts halves.

Today we are whipping up Peanut Butter Dog Treats made with love! I have 2 adorable rescue pugs that are my faithful companions. They love to stay in the kitchen whenever I am baking. Sometimes, they are actively being underfoot (waiting for me to spill or drop something?) and other times they just loll around snoozing peacefully in their doggie bed, contented to be nearby.
One of the things I realized soon after adopting them 4 years ago is that it is hard to find delicious, small and healthy-ish doggy treats for them. One, because pugs respond well to treats, and two, pugs tend to be on the chunky side, thus their treats need to be small for the frequency in which they are expected to be dispensed. Lol!
Anyway, I was tinkering around with a cookie recipe over the summer and thought, now if I just make this smaller and take out anything that is superfluous (to canines) I might just create a yummy treat for my little four legged friends. This Easy Peanut Butter Treats for Dogs is the outcome – I’ve made tweaks to it and this is version #5.
These Peanut Butter Treats for Dogs treats are super easy to make, uses only 5 pantry ingredients and bakes up in under an hour!
Ingredients
2 cups (240g) All Purpose flour 1 cup (115g) Whole wheat flour 2 large eggs ¼ cup (60g) Regular peanut butter only! Please do NOT use peanut butter that uses sugar substitutes- they are harmful to canines! ½ cup (125g) Unsweetened applesauce
You will also need a rolling pin and parchment lined baking sheet to make this recipe.
Making Easy Peanut Butter Dog Treats
Preheat oven 350°F (175°C). Gather all ingredients.
Sift the flour together. Mix in eggs, peanut butter and applesauce until fully combined to form a dough.
Roll out dough using a rolling pin on lightly floured surface till approx. ¼ inch (½ cm) thick. Use cookie cutter to press out shapes.
Put on parchment lined cookie sheet and bake for 18-20 minutes till treats are dry and golden. Transfer to cooling rack.
Once cooled, give Fido a treat! Store the rest of the peanut butter dog treats in an air tight container.
Note: Number of treats depends on the size of your cookie cutter. For the ones I used, the recipe yielded approximately 8 dozen. I wanted to make small treats for my small dogs. If you want to make larger treats, simply use larger cookie cutters.
