I stumbled upon a fabulous picture of a large baked flower bread on Pinterest. The bread was so stunning I had to take a closer look and found out that the original bread was from Russia/Georgia. Using Google Translate, I deciphered the caption of the picture, roughly translated to “Meat Pie Chrysanthemum”. I think that Europeans have the most beautiful elaborately shaped breads especially for holidays and celebration. Therefore, I was inspired and determined to learn how to make a version of this unusual and beautiful Pull-Apart Flower Petals Garlic Bread!

Upon researching further, I found a really fun blog that made a version using cheese and garlic! I was sold! However, I did make some tweaks and modification to the recipe to suit my taste – this is my take on the pull apart flower bread.

Making Pull-Apart Flower Petals Garlic Bread

There are really 3 parts to making this bread. First of all, we make the cheese garlic filling for the bread. Second, the bread dough, and finally, we fill, shape the petals and arrange the dough into a beautiful pull apart bread.

Ingredients

Let us begin by gathering all the ingredients we need.

For the Cheese Garlic Filling, these are the ingredients:
½ cup Cream cheese, softened
1 Tbs Olive Oil
1 tsp Minced Garlic Can be subtituted with granulated garlic
½ tsp Dried Oregano
½ tsp Dried Parsley
3 Tbs Parmesan Cheese, grated
½ tsp Black Pepper, freshly grounded

Next, for Bread Dough:
4 cups Flour
2 tsp Active Yeast
½ cup Whole Milk
1 Tbs Sugar
½ cup Yogurt
1 Large Egg
1 tsp Salt
6 Tbs Olive Oil, or neutral vegetable oil

Last but not least, these 3 items for the garnishing:
6 stalks Green Onions, chopped
1 Egg, lightly beaten for eggwash
2 Tbs Butter, melted Optional

Garlic Cheese Filling

To make the filling, mix together all the ingredients – cream cheese, olive oil minced garlic, dried oregano, parsley, grated parmesan cheese and black pepper. Combine until smooth.

Dough for Pull-Apart Flower Petals

Next, dissolve the yeast in lukewarm milk, add sugar, stir and set aside for 5 minutes. When the yeast is ready, put all the dough ingredients into the your stand mixer bowl. Mix with the dough hook until the dough is soft and elastic. The dough is ready when it pulls away from the sides to form a ball.

Transfer dough ball into a large well oiled bowl. Cover and put in a warm place to rise for about 1 hour, or until it doubled in size. Grease a large 11″ shallow pie dish and set aside. When ready, punch down the dough, and divide into 2 portions. Move one portion to a working surface and return the other to the bowl and keep covered.
Next, lightly dust your working surface with flour. Roll out the dough into about ⅛ thickness. Using a 3 inch round cutter, cut out as many circles as possible. Repeat with the other portion of dough. Collect the scraps and roll out again and cut until you have about 30 circles. Keep the rounds covered so that they do not dry out.

Shaping the Flower Petals

Let’s start shaping the petals! Start by spreading out the garlic cheese filling evenly on top of each round. Next, fold each circle in half, making a semi-circle, and pinch the points together to form a “petal”. Top the edge with chopped green onions. Place the petal into the prepared greased pie dish.

Start by placing the bread petals on the outer edge of the pie dish and working your way into the middle in a circular pattern.

When complete, cover the bread and let it rise for 30 minutes, or until it has become puffy.

In the meantime, preheat the oven to 350°F.

When ready, brush the top lightly with the prepared eggwash.

Next, bake in oven for 30 minutes, or until the top of the bread is golden brown.

Then, remove from oven. Finally, remove the bread from the pan, and place on rack to cool.

As an option, you can brush on some melted butter on top of the warm bread for a beautiful sheen.
