How to make Costco Raspberries Crumble Cookies at Home
In June 2020, inspired by all the frenzy around Costco Raspberries Crumble Cookies I decided to put my newly honed isolation baking skills to make a copycat version. My homemade Costco Raspberries Crumble Cookies uses a shortbread crust and mixed berries conserves (that’s what I had in the fridge) to put this together. You can easily swap out the raspberries conserves with your favorite chunky jam, which is what I have done in this recipe.
This cookie really deserves it popularity. It is really delicious and just crumbles on your tongue. The rich buttery crust complements the sweetness of the berries conserves or jam. I am using chunky jam here so you can bite into the fruit. Each cookie contains one full heaping tablespoon of sweetness. It is a delectable combination. The crumbles on top adds another layer of texture to the overall enjoyment of this cookie!
Ingredients
This recipe yields 12 large Costco size cookies. These are the ingredients:
2.5 cups all purpose flour, sifted
1 cup unsalted butter, softened
0.5 cup sugar
2 tsp vanilla extract
12 Tbs mix berries chunky jam/preserve
Confectioners sugar for garnish (optional)
In addtion, you will also need 12 small tart 3” mold with removable bottoms to shape and bake the cookies.
Making the Raspberries Crumble Cookies
Gather all the ingredients. Preheat oven 350°F, spray tart molds with cooking spray. In a large mixing bowl, combine softened butter with sugar. Add vanilla extract. Mix well. Next, add flour into the butter sugar mixture. Use a spatula to stir until the dough resembles coarse breadcrumbs, but will clump when pressed together.
Place prepared tart molds into a cookie sheet. Scoop up approx 1 -1½ tablespoon rounding heap of dough and press gently and evenly to the bottom of tart tin. Dough should cover the bottom of the pan.
Carefully spread approx 1 tablespoon fruit preserve on top of the dough, leaving approx ¼ inch from rim.
Sprinkle the remaining crumbles evenly on top. Do not press.
Bake in preheated oven for 25-30 minutes, or until the cookies are golden on top.
Remove the cookie from tart mold and cool on rack.
Sprinkle with icing sugar if you like and it’s ready!
Notes on Costco Raspberries Crumble Cookies
Tip 1: Store in air tight container to prevent the cookies from getting stale.
Tip 2: The cookies tastes amazing with a cup of coffee or tea. Also, it goes very well with a scoop of vanilla ice cream.
Shortbread cookies are typically made with butter, sugar and flour. What makes these cookies special are the crumbles that are loosely put on top of the cookies before baking. I think it gives the cookies an additional zing that makes it so special. I was wondering how are crumbles different from other baked toppings. Costco Inspired Berries Crumble Cookies

A friend brought some of the Costco cookies to me. They were so good, decided to see if there was a recipe out there. I found this one and it is delicious. Two men have eaten them and just raved over the taste. Make sure you use real butter, that is where the shortbread gets its best flavor. I did not have tart tins, so I used cupcake papers in my cupcake pan, put in the dough and took a piece of waxed paper and pressed ,a small glass into the cupcake. If you don’t use the wax paper, the dough sticks to the glass. I left the cupcake paper on after baking. I like them better because I got more cookies! These would be darling in a cookie selection for Christmas. But the taste is just wonderful! This is a true keeper!

Thank you so much for this recipe . I made it , replacing 50% white flour with almond flour . And reducing sugar , as my family does not like too sweet. Also I add the 1/4 tsp of salt . Turn out awesome and tasty . My husband said it was better ,then Costco Raspberries Crumble cookies . Thank you so much 🙂

Can Homemade Raspberry Crumble Cookies be Frozen after baking?
I will be baking these cookies soon, but If they can be Frozen, I can make 2 -3 Batches!

Hi Larry, I have not tried freezing these cookies but I don’t see why not. I would suggest freezing them unstacked on a baking sheet before storing in a zip lock bag. Also placing parchment paper between the cookies should help prevent the cookies with their sticky filling from clumping together in the freezer. Please let me know how they turn out! Thank you so much for posting this great recipe! It came out perfect. I tried using the Cuisinart to pulse the dough but later realized you don’t need to do this at all – was a mess to clean up. I used silicone cupcake liners in a cupcake tin, and these were so delicious. Just pressed down with my fingers and added jam from Costco and did the rest as you say. Coming hot out of the oven, they were delicious!! My son said we should try putting peanut butter and jam inside next time. Our family is addicted to the Costco raspberry crumble, and now I am excited to make these at home and avoid the preservatives.
