These Strawberry Craisin Oatmeal Cups are a wonderful go-to recipe I whipped up for my family using oatmeal topped with strawberries. The craisins gives it a nice tart sweetness. The secret ingredient? A handful of chopped nuts to give it a lovely texture. The best part? These delicious and nutritious treats bake up in under one hour!

If you are looking for a quick and nutritious breakfast on-the-go for busy mornings? Or a fruity delicious snack when you have a munchies attack? Look no further! This oatmeal recipe is tasty and looks pretty enough for company too.

I really like this recipe because it is so simple and tasty! It doesn’t contain any flour, only oatmeal as its base. It is also extremely versatile and you can swap out strawberries for any other fruits.

Simple Ingredients for Strawberry Craisin Oatmeal

The petite cups use simple wholesome ingredients that are also delicious. They are mainly made out of breakfast oats, sweetened with honey and ripe banana, and pumped up with flavor from the fruits and nuts. Sounds great right? Here is the list of items.

For the dry ingredients, 2 cups breakfast oats preferably rolled oats
1 tsp baking powder
1 tsp cinnamon
pinch of salt
Next will be the wet ingredients, 1 cup milk
1 egg
3 bananas, ripe and mashed
2 Tbs honey
1 tsp vanilla essence
The filling and topping consist of ½ cup craisins (dried cranberries)
½ cup chopped nuts of your choice, I like pecans or walnuts
1½ cup strawberry, quartered, fresh or frozen

For equipments: a 12 hole muffin pan, one large bowl for whisking and mixing, one medium medium bowl for combining the liquid.

Putting Strawberry Craisin Oatmeal Together

After gathering all the ingredients, preheat the oven to 375 F. Prepare a 12 hole muffin pan with cooking spray and set aside.

In a large bowl, whisk together the dry ingredients – oats, baking powder, cinnamon and salt. Next, in a separate bowl combine all the liquids – milk, egg, mashed bananas, honey and vanilla until thoroughly mixed. After that,
pour the wet mixture into the prepared oats. Then, use a spatula and mix well. Finally, stir in craisins and chopped nuts and the mixture is ready to be transfered to the muffin pan.

When ready, scoop the batter into a prepared muffin pan. Next, top the oatmeal mixture generously with sliced strawberry and pop into preheated oven.

Bake the cups for 25-30 minutes until the oatmeal starts to looks golden. Check for doneness by inserting toothpick and it should come out clean. If not, allow to bake for another 3-5 minutes.

When done, remove from oven and place on cooling rack for 5 minutes. Your Strawberry Craisin Oatmeal Cups are ready! Let’s eat!

Bakers Notes:

Tip 1: This recipe is easy to customize to suit your taste. Simply swap out the strawberries and use your favorite berries instead. 

Tip 2: If using frozen strawberries, blueberries and or raspberries do not thaw. Simply rinse them, gently pat dry and use.

Tip 3: Lightly toasting the nuts before mixing in will give the cups an additional crunch. Yum!
